Skinny Chicken Enchiladas
So, I am totally a Mexican food junky. I couldn't go without being able to indulge in some anymore so I just had to make a skinny version of enchiladas. I found this amazing blogger who puts a spin on skinny recipes, Hungry Cupcakes. Cute, right?! I absolutely loved this one and its SUPER easy.
